Chocolate Covered Stuffed Dates
Happy Ramadan! Today I wanted to share an easy treat that is perfect for Ramadan - chocolate covered stuffed dates. You can give these as a Ramadan gift to friends and family, or bring them as a hostess gift when you are invited to Iftar. Or, you can just enjoy them yourselves :) I plan on giving these out as a little Ramadan gift, so I’ll show you step by step how I make them, and how I package them .
I decided to make 2 kinds of stuffed dates - the first kind I stuffed with almonds, covered in dark chocolate, and topped with coconut and almond slices. Like an Almond Joy, yum! For the second kind, I stuffed with peanut butter, covered in dark chocolate, and topped with sea salt - going for a Snickers vibe with that one.
Ingredients:
Whole Medjool Dates
Almonds
Peanut Butter
Dark Chocolate
Shredded Coconut
Sliced Almonds
Sea Salt
First, you want to use a knife to slit the date, and take the pit out. Don’t cut all the way through the date! Just make a little pocket for your stuffing. For the almond dates, I stuffed each date with 2 almonds. For the peanut butter dates, I used a piping bag to pipe in the peanut butter - much easier than using a spoon. Don’t overstuff your dates (I learned that the hard way).
Next, its time to cover them in chocolate! I used a Wilton chocolate melting pot to melt my dark chocolate. My husband picked this up from Walmart for me last year - he knows I like to bake so he’ll bring home random finds every now and then. And this has been a game changer! Finally, time for toppings! I sprinkled sea salt on top of the peanut butter stuffed dates, and shredded coconut & almond slices on top of the almond ones. Put these in the fridge for a couple hours, or overnight, before serving.
Since I am giving these out as a Ramadan gift, I placed 3 dates in a clear treat bag, tied it with twine, and added a Ramadan Mubarak gift tag. You can find the tags on Etsy here.
